impressed with the performance of this pan.I have baked with other
"silverstone" type pans that are readily available at mass
merchandisers, but found I was replacing them due to warping and
wear atleast twice a year. Not with the Chicago Metallic line!This
pan cooksvery evenly.I noticed a difference immediately when I
switched.Mycasseroles and especially my cakes came out better than
with any previouspan. You will have to experiment when using it for
the first or second timeto determine the temperature and time
changes to make to the receipe.Ifound that the recommended
time/temperature change worked well for me. Cleanup is very easy.I
am so impressed with this pan that I am one by onereplacing all of
my bakeware with the Chicago Metallic Professional line.

to Basics steam canner for 7 canning seasons. I've canned dozens of
cases of peaches - note - not an acid food - and have not had a
single quart jar fail to seal properly nor have I experienced any
food spoilage.Tomato salsa, tomato sauses, chutneys, pickled
pumpkin, pickled peppers, tomateos - all without any failure.Sure,
I understand the government's concern.Big Brother just wants to
make things idiot proof because they're so accustomed to working
with other idiots - namely other government employees.If you buy
this canner, READ THE INSTRUCTIONS THOROUGHLY.Remember, it's YOU
who is responsible for proper use of this or any other product.
I understand Big Brother's concern about the steam temperature not
reaching the boiling temperature necessary for killing spoilage
organisms.I bought a long stemmed candy thermometer and drilled a
hole to match the probes diameter about 3 1/2" in from the edge of
the lid.Now when I can I ignore the steam venting from the holes
near the bottom of the lid and instead start my canning time when
the thermometer reads boiling temperature.Because I live at 5600
ft. I always adjust my canning times for altitude as well.Down side
- I can't use the lid as a spagetti pot as the manufacturer
suggest.No problem.
Today I canned 9 qts. of peaches and 6 pnts. of plum/peach
chutney.All with my steam canner.It was most enjoyable!Speaking of
joy, all of you canners should get yourselves a copy of Linda
Ziedrich's book - The Joy of Pickling: 200 Flavor-Packed Recipes
for All Kinds of Produce from Garden or Market. Well researched,
well written and full of delicious recipes.
If it wasn't for the flimsy aluminum grip brackets I'd give this 5
stars.

work great. The flavor of the oak was in our opinion superior to
the more popular and readily available hickory and mesquite that
you find at the supermarket these woods are overpowering for our
tastes. We did not taste any hints of wine and was not expecting
to. But it did have a mellower flavor than other oak wood that we
have had in the past. The best thing about this brand is that the
chunks are very uniform in size and burn equally making the
estimate of how much you need very predictable. meaning you start
with 5 chunks. see how it comes out and adjust the next time. To
smokey for you- use 3 not smokey enough-use 7 the uniform size
makes the guesstimate quite accurate. The other thing I like is the
packaging. Yes-the packaging. Most wood come in bags and makes the
storage of them a bit clunky. The boxes make good use of space and
can be stored in camping bins and bbq boxes much more efficiently.
We store 3 different flavors of wood in the same box and only pack
the 1 box. Anyone who grew up with the same tetris like mentality
should relate. We also like the woodchips for pork. and our
favorite are the chips for seafood and veggies! The seafood and
veggies chips are 5 star!!!!!

these ... returned the first due to a screw head from bottom
heating element protruding not slightly ... but enough to crease
the bottom of the stainless steel pot.Felt this could be a problem
in the future for a pot that undergoes pressure.Also, this unit
would not seal.Top did not fit bottom of pan, regardless of
gasket.
Second unit I tried would, also, not even come close to sealing.Top
turned too far and had to stand there and apply pressure to get my
meal done.Luckily, could return this one also.Done with this
model!!!

ton.)
Well made and solid. It does have a tendency to list a bit (off
balance) when lifted by the handle (assuming you could, in fact,
lift it when full).
This works great on open fires, grill, gas and electric burners,
and especially our induction cooktop. I can cook corn on the cob
for a whole party (and have on numerous occasions). Its great for
gobs of chili too.
Haven't used it for deep frying. Too much oil to fill it (i.e.,
haven't had the need yet).

and I know good BBQ.And the best (and IMHO, ONLY) way to cook BBQ
is "low and slow" - cook at low temperatures and for long periods
of time.You have to be patient to cook good BBQ.You have to get the
internal meat temperature to hit 185 degrees in order to break down
the fats to make the meat (beef) tender, and if the temperature is
too high it over-cooks and can dry out the outer layers.And my, and
my kids, favorite BBQ is slow smoked beef ribs.We have an outdoor
BBQ that makes awesome ribs.The trouble is that now that I live in
northern California (not a decent Texas style BBQ place anywhere),
the winters are rainy, wet and a little cold.So when I came upon
this indoor smoker I was cautiously enthusiastic.While the concept
looked sound, the real issue is with the wood chips.I was afraid
that in such a small cooker the wood chips would all burn up within
the first hour or so, basically leaving the meat to slow roast for
several hours.But at only about $70 I thought, what the heck I'll
give it a try.Even though this product/seller wasn't listed as
Prime 2-day shipping, the product arrived very fast - within a
week. It came full assembled - all I had to do was insert the
thermometer - which is a CRUCIAL part to slow smoking.So I washed
the parts, put double the recommended amount of hickory shavings
(almost saw dust consistency) in the bottom and loaded the meat
tray with my overnight-rubbed beef ribs and some beef oxtails that
I happened upon in my local Safeway.I put it on my electric stove
and set the control to Medium.Here's a difference - the
instructions call for "medium high" heat to start - I used medium
because I didn't want it to get too hot too soon and burn up all
the wood chips too early.It worked great.** Don't forget to turn on
your exhaust fan over your stove!While it doesn't give off enough
smoke to see, you can really smell it and it can be a little
overwhelming, permeating your whole house. **Also, please look at
where the temperature probe sticks down into the cooking area and
make sure that you keep your meat away from it so that when you put
on the lid the probe isn't touching any meat.It took about 1 hour
for the temperature to get up to 180 degrees, and at that point I
turned down the stove to med-low.In another hour it was up to 200
degrees.I left it there for 2.0 hours and then turned up the stove
1/2 mark closer to medium.The temperature rose to 210 degrees where
I left it for the final 2 hours.So the complete cooking cycle
looked like: 1 hour warm up, 1 hour at 190, 3 hours at 200, and 2
hours at 210.Also note that during the transition between 200 to
210 degrees I turned it up to Medium for about 3-4 minutes to have
it create some additional smoke.I did this as a test - and this was
how I learned that there were still good chips left that could
create additional smoke.Please also note that smoke is being
created at the lower settings but it is just too low to see.Your
nose is the proof.
All stoves are different, especially gas versus electric, so you'll
have to learn how yours reacts as you go.I was lucky in that my
very first BBQ worked to perfection.All of the meat was
melt-in-your mouth tender, and the smoked flavor was perfect.Now I
can smoke meats any time I want and way more frequently because
this thing is small and so easy to use.Please line the drip pan
with heavy duty aluminum foil!Even though it is non-stick, that
melted fat is always hard to clean off.The meat tray is also
non-stick and cleaned very easily.The bottom piece and the bottom
of the drip pan were another story - these took a little more
effort, but WAY worth it.Another pre-concern I had was the amount
of meat it would hold.It is definitely smaller than any outdoor
smoker, but again I was pleasantly surprised.This thing cooks
enough meat (beef) for two meals for myself and two kids.One good
sized chicken should fit, too.All-in-all, an awesome product.If and
when this thing ever wears out I will definitely buy another
one.Indoor, slow smoked BBQ any time of the year!

Robin: this is a piece of junk.The gears do not mesh properly and
the design of the cooker is so bad that a dead frog could pop corn
better.The gears skipped almost always, and when I held the cooker
so they didn't skip the machine still would not pop 4 ounces of
corn.The corn gets stuck, impacted, and burnt and afterward had to
be pried out of the cooker with a lot of effort.
Rather than try returning it, I took it on as a fix-up project.I
moved the main motor over one third of an inch and that fixed the
gear problems, which tells me the problem should not have existed
in the first place had any thought gone into it.
Then I replaced the flip lids on the cooker with lighter weight
material that would let the popped corn out easier.After much trial
and error, I finally got the popper so it worked with two ounces of
corn.Much more and it still failed miserably.
Even in the best cases, the popped corn in the cooker pushed out
half of the un-popped kernels. A bad design all around and
obviously never tested.I recommend avoiding this and any related
product.Personally, I'm also putting Discount Tommy on my
"avoid-at-all-cost" list for endorsing and selling this.

thrilled with the heft and quality of the Le Creuset poterie line -
and this is no exception. After years of trial and error I have
found this to be the perfect pan for my lasagna. I like to make BIG
batches of lasagna, and this pan lets me feed an army. The color
and finish are flawless and that famous Le Creuset non-stick
ability is in full force here. Even after baking a big lasagna in
it, washing this thing by hand is a piece of cake!
So, to sum up: Its large, it looks great, it cooks evenly, and it
is very easy to clean after use. All of that for a pretty good
price too! Highly recommended!
