Who doesn’t love chocolate cake? I think one of my favorite cakes
is chocolate cake with a raspberry filling and white frosting.
I’m always on the lookout for non dairy chocolate recipes. I found
a very easy to make non dairy chocolate cake recipe that gets
compliments every single time:
1 ½ cups flour
1 cup white sugar
1 cup cold water
1/3 cup cocoa powder
1/3 vegetable shortening, or vegetable oil
1 tablespoon cider vinegar (do not use other vinegars, must be
“cider vinegar”)
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon salt
Combine flour, sugar, cocoa powder, baking soda and salt. Add
shortening and mix in. Add vinegar to water and then add to the
rest of mixture a little bit at a time, beating well after each
addition. Add vanilla and mix. Pour into greased/wax paper-lined
cake pan and bake at 350 degrees for about 30 minutes.
If you like sour cream, this recipe is wonderful. The sour cream
helps make the cake moist and gives it a wonderful flavor:
16 ounces unsweetened baking chocolate (I melt the chocolate very
lightly in the microwave)
1/4 cup butter softened
1 2/3 cups boiling water
2 1/3 cups flour
2 cups white sugar
1/2 cup sour cream
2 eggs
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla
Preheat oven to 350 F. Grease and flour a 13 x 9 x 2 inch baking
pan. In large bowl, mix chocolate, butter and water. Stir until
mixture is smooth. Add flour, sugar, sour cream, eggs, baking soda,
salt and vanilla. Using electric mixer beat on low until smooth.
Pour batter into prepared pan. Bake 35 to 40 minutes or until
center is done.
If you don’t like sour cream, try mayonnaise. The mayonnaise leaves
the cake very moist and with a wonderful taste that most folks just
can’t quite place. Do not substitute Miracle Whip or other salad
dressing for the mayonnaise. The cakes do not taste quite
right.

An easy vanilla cake recipe is essential for any good cook (or even
a not-so-good cook who still needs to bake sometimes!). Whether you
need it for a birthday, a baby shower, a graduation, tailgating, or
"just because," a basic white cake should be part of any baker's
repertoire. It can be served simply with frosting, or baked into
cupcakes; it can be made more special by stirring in mini chocolate
chips or crushed Oreos; or you can even cut it up and turn it into

chocolate. Very little in life is as adaptable and cooperative as a
white cake!
Now, I normally create my own recipes; my hobby is entering cooking
contests, so I'm always trying to come up with new ideas and
devising new concoctions. (And in all honesty, some of those
concoctions have been pretty odd in my efforts to be "innovative!")
But I have to give credit where it's due, and my favorite easy
vanilla cake recipe is a slight adaptation of one from Taste of
Home magazine:
1/2 cup butter, softened
1-1/2 cups sugar
2 eggs
1 tablespoon vanilla extract (double-strength, if you've got
it)
2 cups unbleached flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/3 cups buttermilk
Preheat oven to 350° F. In a large mixing bowl, cream together the
butter and sugar; stir in the eggs and vanilla. Mix together the
flour, baking powder, baking soda and salt. Add half the dry
mixture, and combine well. Stir in the buttermilk until well mixed,
then add the rest of the flour mixture and beat until smooth.
Divide the batter between two greased and floured 9" baking pans
and bake for 30 minutes, until a toothpick inserted into the center
comes out clean. Cool completely.
Even if you don't have a specific occasion to bake for, but the
craving for cake simply overtakes you, this easy vanilla cake
recipe will calm your desires. Not only is it made very quickly,
but it also requires no particular skill; so whether you're an
expert or a novice, baking this cake will not be at all
intimidating. And isn't that the best kind of recipe, one that is a
sure thing? This easy vanilla cake recipe warmly invites anyone to
enjoy it, even if they've never baked before.

This is my favorite birthday cake recipe that my mom made for me
every year. Mom always made us feel special on our birthdays. We
got our favorite meal and she’d make whatever cake we wanted. This
one was almost always the one I requested. I made it for myself
once I was out on my own and finally realized just how much effort
I made mom go through each year. But the payoff was so worth it. I
love this cake because it is unlike traditional cake recipes. The
taste and texture is so unique. I hope you like it.
Poppy Seed Cake
3/4 cup butter
3/4 cup milk
2 teaspoons baking powder
1/2 cup poppy seed
1 1/2 cups white sugar
2 cups flour
4 egg whites beaten
1/2 to 1/4 cup milk
Soak the poppy seed in 3/4 cup milk overnight or at least 2 hours.
Beat egg whites in a small bowl. Reserve the egg yolks for the
caramel topping below. Combine all of the other ingredients and
then add the egg whites. Pour into a 9 x 13 inch greased pan. Bake
at 350 degrees for 40 to 45 minutes.
The following two recipes are the frosting for this cake.
Caramel Topping
4 egg yolks
1/2 cup chopped pecans
1/2 cup cream
1 cup white sugar
Combine above ingredients and cook until thick. Spread over the top
of the cooled cake.
7 Minute Boiled Frosting
1 egg white
3/4 cup white sugar
1 tablespoon white syrup
2 1/2 tablespoons water
1 teaspoon vanilla
Put the first four ingredients in a double boiler and heat over
medium heat. With an electric mixer, beat the mixture until it
stands in peaks. It should look white and creamy. Add vanilla and
spread frosting over caramel topping on cake.
