reviews)We were so excited when we saw there was a new
Madhur Jaffrey book on Asian cooking that we ordered it
immediately. What a hoax--this is nothing more than a reprint of
one of her earlier books, Far Eastern Cookery. That book is out of
print, and so if you don't have it you might enjoy this book. But
everything is virtually the same--the text and the recipes! The
only difference is that there are a few Indian recipes tossed in,
and there is less interesting information on the countries. The
format is also less convenient. The publisher should be ashamed,
since they also published Far Eastern Cookery, but there is no
mention of the earlier book anywhere in this one--not even in the
list of her previous books. Buyer Beware!

reviews)For my seventh birthday, my favorite aunt gave
me the Betty Crocker's New Boys and Girls Cookbook. I was so
excited since I was the eldest of four kids and always trying to
find ways to help my working mother. No more simple dishwashing
& ironing for me! I was moving up to the position of family
"chef"!
My first attempt was the meat loaf recipe from that book. I
followed every direction to the letter! And discovered two things:
1) Not everyone likes an entire tablespoon of Worcestershire sauce
in their meatloaf and 2) It's alright to alter a recipe to
accomodate varied tastes.
Even though my first meal largely became dog food for a dachshund,
I went on to try many of the recipes in that book and it became a
cherished part of my childhood. The recipes are given in clear
detail with variation suggestions and photos to inspire and
tantalize. The holiday suggestions in the back of the book were a
particular favorite of mine.
Basic cooking terms, measurements, kitchen utensils, kitchen safety
and even table manners are discussed at the beginning of the book.
This book has a wonderful "retro" feel giving everyone the feeling
that Carol Brady, June Cleaver or some other perfect TV mom is
about to come to the door to borrow a cup of sugar. Kids today can
definitely benefit from the basic knowledge and simplicity of this
book.

reviews)If you've come this far with Jennifer and
Clarissa, this is truly "full throttle", and you won't be
disappointed! You can, literally, *hear*, both of their voices when
you read Clarissa's comments at the start of each chapter and both
of them commenting about the receipts they've compiled for this
book, which is just entirely wonderful! I happen to listen to
anyone who sings the praises of animal fat, butter and the like
with my my own good sense telling me, "No! It's not good for you!"
And then, my French-based culinary training kicks in and says, "So
what? You don't eat like this everyday, so *enjoy*!" This is why I
love "The Ladies" books. If, twice a year, I can make a true
Alsatian choucroute and please everyone, I'm sure I can also pull a
recipe out of a "Ladies" book and remind everyone what home cooking
is all about.

reviews)I adore this cookbook. The photographs are
beautiful, the story behind each recipe is fascinating, the
explanations are clear and the results are superb. I am awed by
Marcella Hazan's ability to take simple ingredients and create
fantastic results with sheer technique and attention to details,
such as slicing vs. chopping garlic, sauteing certain ingredients
for a long time and adding others for a short time, using butter
here and olive oil there and even just plain vegetable oil at other
times. There are two summer pasta sauces with nearly identical
ingredients, and, as Marcella points out, completely different
results. I have made almost all of the sauces and none have been
less than delicious. I have discovered the joy of pancetta thanks
to this book. I have learned how to make risotto, very good and not
all that difficult. Now I am venturing into the meats - the beef
stew with capers, cornichons and pancetta was amazing. I have
learned alot about good cooking from this book, and not just of
Italian food. Marcella's cooking is alive and accessible and
completely masterful at the same time.

reviews)If you want a "just the facts, ma'am" type of
cookbook this is not for you. However, beyond the good range of
simple but inspiring recipes, it was the stories and pictures that
are mixed in that really made this book for me. (NB: I didn't mind
the colour-coding of the recipes as there is an alphabetical index
in the back)
I will definitely be adding more of Tessa Kiros in my cookbook
collection.

rice cooker. The rice cooker is the single button cook/warm type
with a lid that snaps closed and has a seal. The recipes are for
that type of cooker so I don't know how it would work for fuzzy
logic types. The recipes are easy to fix and the ingredients are
easily found. I only wish it had more recipes in it. It does cover
a variety of foods and tastes, including desserts. I like the fact
that although limited, the more general approach to the recipes can
be used as inspiration to create your own. Recipes include rice
dishes (risotto too), bean dishes, stew beef, pasta meals, soups,
dessert, etc.. There is even a chicken fettuccine recipe that uses
frozen chicken.

especially if they love to grow plants. Growing Vegetable Soup is
also woderfully illustrated. I used this book in a Literacy Bag in
conjuction with a Peter Rabbit Garden created by my university. An
activity that can be used with the book for young children would be
a matching game--vegetable or tool picture to word.

reviews)I would like to take issue with the previous
reviewer concerning the fact that the recipes are taken from
previous magazines. I for one am delighted to have these excellent
and thoroughly tested recipes and product reviews and commentary
finaly assembled into a single well organized cookbook. I greatly
value these recipes and use them often, but found it tedious to
have to thumb through the magazine issues looking for ideas for
cooking pork chops for example. All similar recipes are grouped
together. If one uses the monthly magazines and then reads the book
description and reviews (above), it should be obvious that the
magazine recipes would appear in " Cook's Country's" first ever
cookbook! Why wouldn't they? I would be dissapointed if I looked
for my favorite recipes from the magazine in the cookbook and
couldn't find them. Especially for tried and true classics.
For example, If the people at "Cook's Illustrated/ Cook's Country"
test recipes for fried chicken and after much tweeking (as is their
custom) offer up a recipe that is the "best recipe", I would expect
to see that recipe in any of their cookbooks in which it would be
pertinent. How many BEST recipes for a single dish can their be. I
assume ONE. Therefore whether I reach for their "American Classics"
volume or one of their more comprehensive cookbooks, I would expect
to find THE best recipe for fried chicken in all of them, unless of
course they've further developed that recipe.
I've repeatedly seen this kind of complaint , that they repeat
recipes (as if this was a flaw or a rip off, which it's not) and/or
they never add new recipes. Cook's Illustrated is constantly
testing and publishing new recipes and sometimes updating older
ones.
I've been an avid professional and home cook for about 40 years now
and own thousands of cookbooks and nothing comes close to the
cookbooks offered by "Cook's Illustrated'" (I own them all). I'm
not alone in this opinion. Read the reviews for their other
cookbooks.
I would highly recommend any thing they publish to any one who
enjoys cooking and wants thoroughly tested, fool-proof, and
delicious recipes with one caveat. Read the descriptions and
reviews of the book(s) you intend to purchase and make certain it's
something you want.

reviews)This is my all-time favorite cook book. I cook
recipes from it all the time. Most are easy and very tasty!! I have
given many copies out as gifts to people just arriving in New
Mexico or to others who might like to cook with chiles. When my dog
ate my original copy (probably tasted good with little chile stains
here and there), there was no question I would get another. Was sad
to see it is no longer in print. But the used copy I recieved
looked like new.

rights reserved.Feast Day Pumpkin StewPumpkin, chiles and corn are
foods native to New Mexico and frequently found in traditional
Indian stews. This updated version is invigorated with chorizo and
given a pleasing creaminess by the addition of milk.1 teaspoon
canola oil3/4 cup finely chopped onion (about 1 medium onion) 3
garlic cloves, minced 8 ounces chorizo, chopped4 cups diced pumpkin
flesh1 1/2 cups rich chicken or vegetable stock2 cups skim milk1/2
cup chopped roasted and peeled New Mexico green chiles 1/2
teaspoonground cuminsalt to taste1 1/2 cups fresh or frozen corn
kernels or cooked posoleIn a large heavy saucepan, heat the oil
over medium high heat. Add the onion and garlic and saute until
they've softened, about 3 minutes. Add the chorizo and saute until
no longer pink, about 5 minutes. Add the pumpkin, stock, milk,
chiles, cumin and salt.Simmer, partially covered, over medium-low
heat until the pumpkin is tender. Add the corn and heat through.
Serve it in bowls, sprinkled with any cheese desired for garnish.
Yields 4 servings.

third-world nations, are delicious, easy-to-prepare, healthy, and
can be made from inexpensive ingredients after an initial
investment in spices. My husband and I were unemployed students and
this cookbook gave us an endless variety of ideas for how to
prepare lentils, at 50 cents a meal! I buy fresh garlic and ginger
and keep both in my freezer. No need to peel the ginger if you've
washed it before freezing it, and it breaks apart easily when it
has been frozen. Though seasonings can be expensive, they can make
the most basic ingredients--dried beans, lentils, grains--savory
and satisfying! If you don't have the ingredients the recipe calls
for, improvise! These recipes are extrememly versatile.
There is a index for the recipes origin, so you can decide to have
a complete dinner featuring a particular nation or region. Many
meals can be prepared with one or two pots on your stove, as many
kitchens in the world contain only a wood-fired stove.
If you buy this book, spend some time just reading it-- it is
filled with stories and observations from MCC volunteers who lived
in community with the poor of the world and experienced generosity
and hospitality of their neighbors. Some stories will bring you to
tears. You will never think of food in the same way again.

cooking recipes. This endearing cookbook is written with love,
tears and more love and the recipes included read (and taste) like
old world home cooking. Mama's Spinach Rolls, Veal Piccata and
plenty of sauces are among the very easy recipes that seasoned and
new cooks will enjoy. Dom DeLuise shares recipes from friends,
families and his own kitchen and like all good cooks, has a story
for each and every one. A joy to read.
