Recipe of the Week: Herb Potatoes with a Mustard Sauce



First and foremost, I'd like to thank everyone who emailed and commented on my "Paris Shoe Conundrum!"  It really did help with my packing plans.  I have one little backpack to try to squish my bridesmaids dress and heels ALONG with enough clothes to last me five days...I'll keep you posted on the strength of the seams in my pack!

Secondly, sorry for the radio silence.  I'm pretty diligent about posting, but sometimes you get a call at three in the morning for work and you don't get to come home until five that evening.  THIS is why I am crossing an ocean to go to a wedding and travel with Shug.  Our boundaries have been encroached upon by our jobs and it's about time we get a break!

Thirdly, with the insanity of work, I haven't been able to cook as much.  And if I have had the opportunity to cook, it's been an under 15-minute meal (more on this next week).  But here is a little recipe I whipped up that's exceedingly easy to make, takes only about half an hour, and is really inexpensive to feed a crowd.

Shug and I have had moderate success in our garden this summer, but our herbs have taken off!  This recipe can accommodate whatever it is you have on hand, but I used lemon-thyme, chives, rosemary, and flat-leaf parsley.

Herb Potatoes with a Mustard Sauce
Serves 6-8
Ingredients:
3-4 lbs. new or waxy potatoes, like Yukon Gold, scrubbed clean and cut into chunks
Salt
2 shallots, diced small OR 1 small red or white onion diced and rinsed with cold water, drained well
3-4 generous tablespoons of mixed herbs like parsley, rosemary, thyme, chives, dill, etc.
4 tablespoons extra virgin olive oil
Salt and pepper to taste
2-3 tablespoons Dijon mustard
1 tablespoon balsamic vinegar
Fresh herbs for garnish

Bring a saucepan of the potatoes and cold water that has been generously salted to a full boil.  Reduce to a vigorous simmer and cook until potatoes are easily pierced with a knife.

While the potatoes are boiling, in a large bowl, whisk the shallots or onions, mustard, olive oil and balsamic vinegar together until well combined.  Season to taste with salt and pepper.  Drain potatoes well and add to bowl with sauce.  Toss to combine and set aside.

Finely mince all of your herbs, setting a few sprigs aside for garnish.  Once the potatoes are cool, add the herbs and toss well to combine.  If the potatoes are too hot the herbs will discolor, no biggie if they do, it just won't look as pretty!  Spoon into a serving bowl and garnish with reserved herbs.  Can be served at room temperature or chilled.  Enjoy these easy, yummy potatoes!

When is a Bargain not a Bargain?



I’ve been thinking about some stuff I wanted to share with you, I’m worried you see, a little concerned you could say, about our state of mind when it comes to being a retailer and a customer.

Everyone I speak to is trying really hard to get their sales up but at what cost? Is cheapening their services the right way forward?

If you've priced your products correctly in the first place then how can you reduce them even as an enticement?


A friend of mine in the catering industry was telling me that she has reduced some of her prices, created some special offers, however, this is the bit that frightens me, in order to reduce the price she has had to reduce her standards/ quality because it would be impossible to cheapen her prices otherwise, the pound is rubbish, as we all know the cost of raw materials has gone up, holiday entitlement has been increased in turn increasing the cost of labour, so she has no option. WhenisaBargainnotaBargain? The concern with this is that standards will drop, we’ll become a nation of mediocrity not specialists, everything will be done on the cheap, no-one will value truly skilled people.


I read a blog recently suggesting that readers/brides take advantage of offers from a variety of Beauty professionals, one offer was for a full manicure with a free pedicure, another offered £10.00 off their spray tan price and another offered free back massage with each facial (Both of which were done by an un qualified apprentice), in other words the readers should go to each Beauty Therapist taking advantage of their special offers. I’m not a beauty therapist but I do understand these offers are to entice us, the consumer to use their other services at full price and so we should, because if we don’t, not one of these independently owned businesses will survive if all we buy from them is a non-profit making offer!

WhenisaBargainnotaBargain? My father was of the old school of flower buying and selling, he bought our flowers from the then buoyant wholesale and growers markets at Smithfield in Manchester, he used to bid and barter, negotiate and generally drive a hard bargain. WhenisaBargainnotaBargain?


However,one of the most important lessons he taught me was always pay what you know to be a fair price for a beautiful flower, and that’s the skill bit, everyone can try to get things cheaper, but if you drive too hard a bargain the grower won’t send to Manchester, he’ll send to Covent Garden instead and we’ll be left with lots of second rate cheap stuff like the Supermarkets sell.


Another one of his little gems was this “It’s much better to be a really good customer of a few suppliers than a poor customer of many” . Who gets the best colours, quality, first delivery, best designer? the answer is simple, the really good customer of course!


I never ever understand the thinking behind reduced old flowers, they are dead, why buy them, but people do. However with any fresh product there can be gluts, particularly in the spring, if the weather gets warm early, the tulips and daffodils shoot up, the price is cheap to move the flowers along so the consumer can take advantage of “Mother Nature” no harm done, these natural offers are the ones we’ve all been taking advantage of for 100’s years and long may it continue.


So the point is this, when is a bargain really a bargain?


Do we as consumers just want things to be as cheap as possible irrelevant of the actual cost to our services, or do we value these skilled professionals, have “things” less often but done properly? I know which I’ll be going for, and I will, when I can, continue to support those services who do the job properly with a qualified, valued and trained team!

You can get a real steal at a house foreclosure sale--or you can overpay for a money pit. Here's how to avoid the latter.

To complete this How-To you will need:

Knowledge of how auctions work
Low expectations
Time to research and inspect properties
Cash for a 5% deposit
Pre-approved financing
An expensive outfit
A copy of the auction rules

Step 1: Know your auctions

Know your auctions. At a sheriff's, trustee's, or courthouse auction, you can't inspect the property in advance; no information is provided on the property; you'll need to pay much or all of your bid on the spot, in cash or a cashier's check; and it will be your problem to evict the tenants! But this is where you'll find the deep discounts.

Step 2: Play it safe

If you want to play it safe, go to an auction house sale. The bank already owns these properties (so you won't have to kick anyone out), and you're usually allowed to inspect the premises beforehand. But this comfort level comes at a price—you'll typically pay 90% to 95% of the market value.

Step 3: Expect the worst

Expect the worst with any house you buy at auction. If a homeowner couldn't afford his mortgage, it's reasonable to expect he wasn't keeping up with maintenance and repairs, either.

Tip: Be aware that homeowners who are forced out of their houses sometimes express their bitterness by taking with them anything that isn't nailed down, leading to huge (and unanticipated) repair bills for the new owner.

Step 4: Do a drive-through

Drive through the neighborhood of any foreclosed home you're considering. If the area is teeming with foreclosure signs, prices are likely to fall even farther. It also may be the sign of an area on the decline.

Step 5: Check what you can

Check out as much as you can about the house in advance of the auction. If you're allowed to do an inspection, take a contractor with you; he'll be able to give you a ballpark number on the repairs you're looking at. Check if there are any liens on the home. Review the title search. Know what other homes in the area are worth.

Step 6: Have cash

Be prepared to pay on the spot a 5% deposit, in cash or a cashier's check, if you have the winning bid at an auction house sale. At a sheriff's sale, you might have to pony up the full amount.

Tip: Have realistic expectations. Banks aren't in the business of giving away homes, so if a price sounds too good to be true, it probably is.

Step 7: Come with pre-approved financing

Come with pre-approved financing, even if the auction doesn't demand it. If you make the winning bid and then find you can't get financing, you'll still be legally responsible for paying 25% of your bid!

Step 8: Look affluent

Attend the auction in your most expensive clothes. It will trick other buyers into thinking there's no point in getting into a bidding war with you.

Step 9: Set a limit

Set a limit as to what you'll bid so you don't end up overpaying for a house simply because you got caught up in the heat of the moment.

Step 10: Avoid nasty surprises

Know the rules of your auction. If you win a bid, do you have time to change your mind, or will you have to pay a penalty if you back out? Is there a "reserve amount"—an amount below which the owner does not have to sell, even if you won the bidding? Is there a "buyer premium"—an additional 5% to 10% you have to pay the auction house?

Step 11: Jump right in

Jump right in when the bidding starts—assuming you like the house. Homes sold at the beginning of an auction typically go for less money than those sold at the end.

Santa Cruz Concierge, The Real Story.



I am so excited to be posting on Couture Celebrations blog!  Mondays are my day to write from now on.  I know many of you have been following Heidi for a long time now, so I thought I better take this first post to let you readers know about me and some of the things I do.

By now most of you know that Heidi and I partnered and brought our two awesome businesses together because two cute and smart heads are way better than one! We have been having a great time working together and making the business so "us". Seriously, these past months have been an amazing ride of fun, frustrations, new experiences, hard work, and business 101!

My former business Coastside Concierge, was a business that focused on helping busy people. I am sure most of you understand that a Concierge is basically a personal assistant. We are there to help make our Client's lives easier and less cluttered with the little things. I have done everything from simple errands, organizing an office, writing press releases, paying bills and shopping to dealing with a Client's divorce paperwork and writing 243 (yes really) thank you cards for wedding gifts. One of my favorite stories was when a Client asked me to find a stock certificate they had misplaced somewhere in their home, this stock certificate was detrimental in paying  the down payment on a new home. Believe me that was the most amazing moment, when I found that piece of paper in the very last box, on the very last day, at the very last hour they possibly had. That was four years ago and they are still Clients to this day!




Being a Concierge means you are everything to your Client, sometimes even being your Client. I have Clients who hate talking on the phone and dealing with the mundane things like changing their addresses on their accounts. There  have many times I have "been" the Client to get these types of things done. We know birthdays, passwords and personal information and our Clients know that they can trust us to take care of all their personal information as if it was our own. I am on emergency lists for children's schools,  alarm companies and am trusted with car/home/office keys, pets, children and plants. I am honored to be a part of my Client's lives and even more humbled to be trusted, appreciated and basically made part of the family. Our Clients also know that confidentiality is the most important thing to us, we know all of our Client's secrets and they are ours to keep.

This is part of what I do. I am my Clients "clone", their third arm.  I am their "other them".

Most people think that my Clients have to have a lot of money to have a Personal Concierge, not at all. Most of my Clients are middle class, hard working people usually with families. We have small/medium businesses that don't necessarily want tor can't afford to hire an employee, so we come in and take care of some of the needs that they may have. Basically most of our Clients are just juggling the day to day things to get by and we are here to help make life and work a bit easier.





My passion is Weddings and Events but I found that helping some of my Clients, is so rewarding that it made sense to add the Concierge service to the business. Now, partnering with Heidi, we have a full suite of amazing services with Event and Wedding planning, Concierge and the Couture House.

It really really really helps a person to get through a crazy insane-o week when you know you'll be traveling to Ireland for a wedding in a little over a week...!

Words cannot express how excited I am to be a part of my good friends' celebration.  Both Supermodel and Best Bearded Friend are some of the hardest-working people I know and they deserve this little break!  I'm so looking forward to windy beaches, verdant farmlands, and warm pubs.

Flower Class at the Hidden Garden



What a fun night Trisha had last week teaching a group of couples who get together once a month to do different activities together and catch up. The Hidden Garden was lucky enough to be chosen to help them do something different than the kinds of activities they normally do. Trisha showed them new and interesting ways to create floral arrangements and gave them the tools so they could walk in our shoes and find their inner florist, creating designs with a diversity of flowers and materials. The students listened on as Trisha gave tips but they also pursued their own ideas and veered into different directions than we'd normally take, which was interesting to witness. They experimented and produced interesting floral arrangements of a modern, Asian zen theme. Everyone has a blast!

The Flower Class corvettes will always be associated with the Battle of the North Atlantic, even thought they were also used in all theatres of war in World War II. Alongside other escort ships she bore the main burden of the battle against the German submarines. The escort ships of this class were derived from the collaboration between the British Admiralty and the Smiths Dock Company, which in 1938 had a successful design for a commercial whaler called the Southern Pride. The main feature of this original design was that in accordance with merchant shipping practice it could easily be built in many small British dockyards and its basic engines could be handled by civilian dockyards. Sixty Flower Class corvettes had been ordered before war broke out and by the end of 1940 at total of 141 of the original design had been ordered. The first vessel (launched on 24.1.1940) was completed in 5 Months, the subsequent ones at a rate of one every twenty three days. Once it had been decided that corvettes were no longer to be used as coastal escort ship, but on the high seas, some modifications had to be made. Later these vessels were given a different hull with extended forecastle that improved their thrust and overhang to protect them against the Atlantic seas. In the course of the war the corvettes were equipped, among other things, with radar, more and more powerful anti-aircraft weapon.
Total build: 256, Displacement: 940 tons, capacity: 2750 shp, speed: 16 knots, crew: 47-90 men

The Last of the Mohicans is a 1992 historical epic film set in 1757 during the French and Indian War. It was directed by Michael Mann and based on James Fenimore Cooper's classic novel, although it owes more to George B. Seitz's 1936 film adaptation than the source novel. Ceremony Chairs



Happy Monday!
We had a lovely wedding this weekend, Congratulations to April and Rawley!

While working on the wedding together, Heidi and I were talking about ceremony chairs.  Heidi wanted everything to look perfect and straight and I was much more concerned about the stability of the chairs. For me sometimes function is a priority over perfectly lined up chairs and for Heidi it's about what the outcome of the pictures will look like. Of course this weekends ceremony chairs ended up looking perfect AND being comfortable for the guests. My point is, it's good to have two heads, thinking about two completely different aspects of a situation, in our case we cover all the bases with function, aesthetics and style.

Jason & I go to Holland about once a month to check out what's available, to find new varieties, to source new growers, to keep in touch with new trends and to generally emerse ourselves in fresh flowers and plants.

We visit the wholesale market at the world famous auctions in Aalsmeer near to Amsterdam, the flowers are shown in height/size & colour order by varietal name.

Kothari shared that when developing Pulse Reader, Alphonso labs, aimed at building news in a visual manner without focusing on providing the maximum amount of content. Kothari said the biggest pain point for users is the 20 feed limitations, which is done for memory management purposes. He added that Pulse News Reader would allow for more feeds in the next update and providing better organization for feeds.

Kothari said that in the future, news readers would likely no longer sort stories via source and instead users would perhaps share stories in social news clouds in which users could read news that their friends are reading. Kothari said that in the last several weeks that the further development of Pulse has been focused on improving performance of the application.

Harris mentioned the New York Times takedown request which got Pulse News Reader removed from the App Store temporarily. Kothari shared that Pulse included popular reads which many people were adding and that he thought the New York Times got upset because the application was pre-loading their feed. Kothari expressed disappointment that the New York Times went to apple instead of directly to Alphonso Labs and said that his company had a good working relationship with Apple.

Harris showed off his pencil and rubber band iPad stand and said that he would discuss how to build the iPad stand on next week's show.
