(More customer reviews)Rougie block of goose foie gras, as well as other foie gras (duck) from the same producer, is the one you can find at french airport when leaving for USA. You can then believe that this producer is not the small one you can find in a tiny village in the South West of France. Nevertheless, even if this foie gras is not the best I ever tasted, it has at least the taste of it: a little bit bitter but still smooth and "fondant" in mooth. Of course, it goes very well with sweet white one (cold of course) and nice bread (and do not spread the foie gras on your tartines!!! it is a bit of a crime...). However, it is a little expensive for what it is. Enjoy it if you buy it but do not hope for the big miracle. It is just a preview of what foie gras tastes like, and if you like this special taste, visit France one day and eat the real good stuff.

This concentrated mix is wonderful mixed with water, apple juice, port, rum, whiskey, pretty much any base we paired it with. The flavor is unique, with lots of cinnamon and other aromatic spices.
We tried looking for it the next time we were in the big city, but to no avail - everyone was sold out! I have tried a couple of other sites online - they are either sold out, or waiting for the shipment which "...should be here next week..." If you can find it, snag a bottle or two and bring it to your next cool weather get together.

All of us love it to the extreme with grapes and water crackers. Still because I'm in a very cheesy mood, I thought I'd praise it anyway.
I think that with a good wine selection and plate full of grapes, it's one the best appetizers. Festive meals like Christmas when it takes all day to make lasagna from scratch, it is perfect for the hunger pangs waiting for the really big meal.
Other than that it's a great and healthy snack food for everyday.
I know all you are quite familiar with this cheese,yet I'm still motivated to praise the mildness of flavor an the part I most enjoy the outer layer of the aged cheese which I absolutely relish.

Local shepherds have made ewe's milk cheeses in the French Pyrenees for 4,000 years. Etorki is a modern cheese dating from the late '70s, similar to traditional Basque country cheeses, but it is more supple and close textured. Etorki takes its name from the Basque word for "origin," or "source." The milk comes from small flocks of black or red-faced Manech sheep and is only made from late December to mid July (when the ewes are impregnated again). From June to September, the flock's transhumance to high pastures to allow the lowlands to regenerate. Etorki is aged from three to six months from fine, cut curd pressed in plastic molds, vertically stacked to press curd and expel whey. After a two-hour brine bath, it is rubbed with salt and later in brine soaked cloths. Etorki is oily with butterfat, yet firm and supple with a burnt caramel sweetness and a creamy texture. This is a lovely cheese in the summer for a buffet or picnic with apples and pears, in salads, or with raw veggies and olives.
