What will usually happen is that they set up your reception in one of the lounges on ship. Some ships actually have a "chapel" but most do not.
You could easily have everyone attend dinner that night at one of the specialty restaurants on board. More than likely you'd be the only party there. They are smaller and therefore a more intimate feeling. Though for my sisters wedding, we had one table to ourselves and ate in the dining room every night.

No, they cannot stop anyone from taking pictures at your own wedding UNLESS you signed some contract saying you'll be using THEIRS. If you signed anything when you arranged for the wedding to be held on the boat, you should read that contract carefully.

I had a close friend who got married on a carnival cruise and she loved it!! She said she would do it all over again! Every thing was just the way she wanted it! Good Luck!

This is what I did. I have a traditional wedding ceremony and reception. At the end of it, my hubbie and I went on a Carnival cruise for our honeymoon. Even if you have your wedding ceremony and short reception on the boat, there is not need for your guests to remain on board afterward.
