Soy Sauce Aficianados, How Would I Would Determine Whether Soy
Sauce Is 'naturally Brewed' Or Made Chemically?Hello, I'm wondering
whether or not my
Dark soy sauce by Y Y brand is
naturally brewed or chemically manufactured, and doing this by
ingredients alone is hard. Could the ingredient 'extracts of
soybean' be another wording for hydrolyzed soy protein? What makes
me think that this product might be naturally brewed is that it
doesn't contain caramel coloring, a marker for cheap soy sauces,
and does contain wheat flour. The sodium content is also low, 7%
per 2 tsp (15 ml) serving, which is not to do with the naturally
brewed question but with
Dark soy sauce usually
being higher in sodium than the lite variety. Need help here!
Thanks, Av

Effect Of PH On Rate Of Reaction Of The Enzyme Amylase In Starch
Digestion?METHOD 1.Transfer the boiling tube with the enzyme
(fungal amylase) to the water bath set at 37 C. 2.Add 2cm3 of 1%
(w/v) starch to a test tube and 2cm3 of an appropriate pH buffer.
Place the tube in the water bath for 10 min to equilibrate. 3.Then
with a pipette transfer 2cm3 of amylase solution into the test tube
containing starch and buffer. 4.Immediately add 1-2 drops of iodine
solution to the test tube and return it to the water bath. 5.Start
the stop clock and record the time taken to reach the end-point.
NB! - A black or
Dark blue colour indicates the
presence of starch - A yellow-brown iodine colour means no starch
remains (having been hydrolysed by the amylase) •Record the time
taken for the starch to be hydrolysed in the raw table. •Repeat the
experiment in triplicate for each pH value( from 6 to 10 pH
buffers). How can I realize before I do the experiment what will be
the difference in the time and what will be the result for each pH
buffer? Please help :) with some explanations or links to sources
of info that I can use. Thanks in advance
