Anyone With
Celiac Disease?My husband was
misdiagnosed with IBS, and we believe (after research) that he
actually has Celiac's Disease. My question is: How realistic is it
to keep this under control with

Question About
Celiac Disease?Yesterday I was
diagnosed with
Celiac Disease
(finally diagnosed after 3 yrs of suffering with digestive issues).
I pretty much know everything I need to know about
Celiac because before I was diagnosed (at least 9
months before I was diagnosed) I was suspecting that I had
Celiac disease. Now that I'll be starting on a
gluten free
Diet I'm going to need some gluten
free recipes. So my question is what are some cooking websites that
have gluten free recipes?

Celiac Disease?I have been feeling
all wrong since I had my flu shot in November. I have had
periphreal nueropathy, headaches and just a feeling that something
isn't right. My mother is a first year nursing student and had a
lecture on
Celiac disease. Everything fit, even
things that I really hadn't thought about. I went to my DR. and had
the blood test. 2 of the 3 test came back positive and one came
back negative. I started the gluten free
Diet and
was on it for 2 weeks before my biopsy which came back normal I am
still on the
Diet and am feeling tons better. I am
interested to hear other experiences with the
Disease and would to have some good recipe ideas I
am thinking about putting my three year old on the
Diet with me even if she doesn't heve the
Disease I think it would benefit her. Also any
items that you know of in the grocery store that are natrually
gluten free rather than specialty items would be greatly
appreciated.

Where Can A Woman Get Help In Minnesota To Start Her Own
Business?My mom wants to make and market some of her
Recipes for chili sauce, bbq sauce, and I think
there was some dressings too. She has
Celiac
disease, and her sauces dressings would be suitable for anyone
regardless of diet. I need to know the proper channels to go
through and the capital to do this. I know there's also legal
things that go along with doing something like this. How does she

Gluten Free Diet?My best friend just got diagnosed with Coeliac
(alternativly spelled celiac) disease. What are some really good
gluten free foods? Websites, recipes, suggestions etc. Also are
there any common things that have gluten hiding in them before I
use them to make food that is supposed to be gluten-free?? I love
to cook and bake, but when making food for a gluten-free
Diet I need some really good suggestions. P.S. I
have a kind of cookie that has always been both of our favorite,
called Ranger cookies, with oatmeal, rice crispies, shredded
coconut, and flour. I know I can replace the flour, but does
regular shredded coconut have gluten, and where can I find rice
krispies that are gluten-free? likewise with oatmeal, is it gluten
free? Sorry for leaving the gender out, my friend is a 17-year-old
girl. Also I was wondering what is the best replacement for regular
wheat flour that will work basically anywhere?

daughter on a gluten free
Diet (she is at risk for
Celiac Disease) and I just feel better about
making all her baby foods from scratch at home. I have no problems
with the purees (veggie and fruit) but when t comes to the grains I
am having some BIG issues! I follow the directions exactly but it
keeps coming out like paste. My daughter HATES it - and I don't
blame her! It's awful! I tried both grinding the grains first then
mixing and also boiling the grain until super soft then blending
with formula until a smooth, appropriate texture. Both times it
comes out like paste and my daughter HATES it. Please help! Does
anyone have any tips or ideas? Maybe a better recipe??? Thanks so
much! P.S. BTW, I am beginning with Organc whole grain brown rice.
My daughter is 8 1/2 months old and has already gotten used to the
texture of commercial cereals which are not this pasty and have
more of a sweet taste. Do they put sugar in them? How do they get
that sweet taste? I am not putting sugar in my daughter's cereal.
OK 'ImaVegan' That's NOT what I asked! Take your militant
breastfeeding bull and go elsewhere. I BF until 6 months and can no
longer do so due to medical reasons (not that it's any of your
business). However, you didn't know that becasue it had NOTHING to
do with my question! Did you expect me to just start re-lactating
at 8 1/2 months post partum? Get a clue and don't preach to people
when you don't even know what you are talking about! 19 y/o mom to
Liam: where so you get this 'Milupa' stuff? I've never seen it. Is
it a European thing? What grain is it made from? Is it organic?

How Do You Deal With Parents Like This?After researching it, I
think I have
Celiac disease. I'm surprised my
parents never took me to the doctor as a child - I had bathroom
problems (going once a week or less) and I vomited at least once a
month. I was always sick, complained of so many of the symptoms of
the disease. I had constant nosebleeds and was unable to gain
weight. I've been depressed since I was 9 with various emotional
issues since before that which are also symptoms. I have such a
long list of random symptoms which I'm not going to list. It's
basically an auto-immune disorder where your body is unable to
process wheat, 1 out of every 113 people has it. I talked to my mom
about it and asked if I could go on the gluten-free
Diet which is supposed to heal it. She said ok.
I'm not diagnosed but I figured that I could go on the
Diet for at least a few weeks and see if something
improves. I was looking at
Recipes online but my
mother refused to look at them, making it clear that she didn't
want any part of this and was not going to make me anything
gluten-free. She said I'd prepare everything I needed myself. The
first day there was a small argument when I asked my mom to help me
with the stove. She said that she had already told me that she
didn't want any part in this, that she didn't know how to make
gluten-free food and that she didn't wish to learn how. I wasn't
asking for help with the food though, just the stove. The first day
I felt pretty good. The second day, though, I was feeling a lot
worse and I asked a question on Y!A and they said that that was
actually a symptom of it being
Celiac disease. My
body um, habits, changed quite a bit and someone said that that was
a symptom of me having it as well. My parents were making waffles
and stuff all the time to tempt me. I didn’t eat them, I'm tired of
feeling like crap. Even if it didn't work, I thought that at least
I'd know that that wasn't my problem in the future. My mother
however, was getting upset at this. She began telling me that I was
just doing this to be anorexic, that I looked ghastly, that I was
just doing this as a form of dieting and to starve myself. I'm
actually doing it for the opposite reason, I'm hoping to gain
weight. My father came into my room and asked what I'd want for
dinner, saying that I'd been claiming that everything was gluten. I
said that I didn't know, maybe chicken or some meat. He asked what
I’d want on the side and I said vegetables or rice. He said that
they'd already said they wouldn't make me anything and that I'd
have to do it myself and was just trying to start an argument. It
was stupid though because he was the one asking me what I wanted.
He changed the subject to the yogurt I didn't eat earlier that day
but I'd decided not to eat it after I asked a question and someone
said that it most likely had gluten in it since it had artificial
flavoring. My father said that that was a lie, since only bread and
wheat had gluten in it. Yogurt couldn't possibly have it. He left
after a little bit of arguing. Randomly some time on the second
gluten-free day, my father brought something in my room to weigh
myself. It said I was 113 pounds, which he began yelling was
definitely underweight since I'm 5'5'. I said that it wasn't and my
mother argued that it was. I went up to her, got on her computer
and googled a teens BMI calculator. She said that the fact that I
even knew where to find that was an obvious sign that I was
anorexic. I put in my birth date, weight and height and it showed
that I was at a healthy weight. She yelled that I was obviously on
an anorexic people site but I pointed out that this was on
kidshealth.org..highly unlikely to be a pro-ana site. She argued
that it was absurd, that I was just on a baby’s site. “Am I
supposed to be 113 pounds as well?“ That was stupid since she's
both taller than me and she's - not 16. She still said that the
entire site was false and that she was the only one who was right.
I went back into my room. Later my father yelled that dinner was
ready. They made hamburgers. I said, 'very mature,' and my mother
responded like 'what??' as if she didn't know what was going on.
Well after arguing a bit I mentioned that they'd said I could
prepare my own food, to which she replied, 'fine, make your own
food then.' I tried looking around the kitchen but there obviously
wasn't anything in there since they hadn't bought anything. My
mother said that the only reason I was doing this was to lose
weight, that I looked like a skeleton and that I looked disgusting.
She wouldn't listen to me at all. I said, 'I hate you.' This made
both my parents mad and my dad started acting like an animal. He
was yelling at me and threatening me, threatening to shake me
(???). My mother was sitting on the couch screaming, 'don't just
threaten it - DO IT!! DO IT NOW!!' over and over again. He was
right in my face, yelling at the top of his lungs and hit me. He
was hitting the tables and everything too. I eventually ha had to
eat the hamburgers and I don't know if it's the burgers themselves
or if it's just me but I feel really nauseous and upset. I know
that getting a diagnosis won't do anything. My mother doesn't care
if I'm sick with ANYTHING, she will physically force me to eat.
It's happened before. She will argue with the doctors’ diagnosis
and even if I'm tested it might come back positive since there's a
high chance that the test is inaccurate. Sorry for the length of
this but I'm just out of ideas in terms of dealing with my parents,
I'm to the point where I think that killing myself is the only way
out of this mess. I haven't even included half the stuff said or
that's gone on today.

Gluten-free Casserole Recipe?I recently found out that my husband
has
Celiac Disease and cannot eat
anything with gluten. We've been doing really good with changing
the diet, but we're starting to eat the same things everyday..
Anyway, I used to make this ham and broccoli with cheese casserole
and I'd like to try it gluten-free.. I have the rice pasta, the
only thing I need to switch is the flour for thickening the sauce.
Any ideas on how to do this?? Can I use xanthan gum?? The recipe I
have is pretty basic - milk, cheese, butter, some spices... and
flour. I need to get rid of the flour! Thanks for reading :)
